Forget Tickled Pink ..., Get Pickled Green - Eat out in style at this new environmentally conscious restaurant

I just thought I'd write a short blog about a restaurant I went to during Fairtrade Fourtnight.
Pickled Green opened up on Rose Street several months ago. It's owned by two young fellas. One from Bonnie Scotland and one from Belgium. A quite unlikely combination involving two young, cool, enthusiastic, yet eco-conscious boys; and a vison to provide good, seasonal, simple food, sourced as locally as possible, organic when avaialble and in a friendly, non-pretentious manner.

I went along to an organic wine tasting event and got the opportunity to chat with the owners (who were serving food all evening).
I was really inspired with what the guys are doing. They are working closly with staff, customers and suppliers in order to ensure that their business remains as environmentally sustainable as possible, but at the same time offer fair prices to both customers and their suplliers. They have come up with a Sustainabilty Commitment Statement which oulines the practices upheld in the restaurant:

Anyway....check out the restaurant, which although still in ealry days, I think is going to be fantastic.
I am sure they will be excited to get like minded customers eating there. They also do a great lunch time deal. Two courses for £10, so if you aren't tickled by the restaurant's ethos, you might very well be by it's competitive prices.
